Yummy delicious cholately brownies raw, vegan, gluten-free!!

I know this blog has NOT been about food, but sometimes you just have to beer off the path to share something that is so easy and delectable that it’s criminal NOt to share!!!

And that would be these….

Even the sun came out to shine on these brownies!!! 


Ok, so I’m not the best photographer, but you get the idea. 

Why am I making these brownies, and why do I feel compelled to share????

I just announced that in honor of a significant birthday, I’ll be hiking the Appalachian Trail (in parts–not the whole thing at once). 

I’m officially “in training” and when I came home from my first big training hike, a banana was the most amazing, revitalizing food. 

Being a nutrition expert, I figured that it had to be the potassium. 

Did you know that dates have way more potassium than bananas?? 

So, chocolate, dates, nuts…. brownies!!!!

Here is the recipe! Hope you enjoy yours with NO GUILT!  These puppies are loaded with plant proteins, fiber, and healthy fats. 

Recipe:

1 cup cashews, 1cup Almonds, 1/2 cup hemp seeds.  Blend in a food processor until mealy. 

Add 6 pitted mejool dates and 6 calimyrnal figs (or do 12 of one) blend with the nuts until soft and there are no chunks. 

Press mixture into an 8×8 glass dish. 

Make ganash: clean food processor and dry thoroughly. Add:

1 cup raw cacao powder, 1/2 cup pure maple syrup, 1/2 cup coconut oil. Mix until smooth. 

Top base with ganash and refrigerate for an hour. 

Enjoy!!! It’s for true chocolate lovers!!!! I eat it for breakfast! 😊
